Edulis is about many things – the pleasure of enjoying a gathering around the table to share authentic dishes and to be greeted like a friend; conviviality, feasting, celebrating the craft and tradition of cooking, honesty, and spectacular ingredients.
Our goal is to combine the warmth and approachability of a classic European bistro with our passion for the forests and farms of southern Ontario.
You know that dream of being on holiday in [insert European country here] and driving down a country road lined with cypress and lavender, sighting/smelling wood smoke, and then stumbling upon a fantasy of an auberge fermiere with a delightfully robust couple cooking honest food the way they have been for hundreds of years…We have this dream too. This is the feeling we hope to convey in our Sunday Lunches, and with our Carte Blanche menus.
The remembrance of things past:
When we think of the most magical food memories of our lives – we cannot help but smile in pleasure. Everyone has stories about great meals and food experiences . We want to create these memories for the people that come to Edulis. Human contact – the act of sharing a meal, laughter, pleasure, exchange of ideas, dialogue, the vital link to the joy of sitting at a table and briefly halting the passage of time and reality for the fantasy of the feast.
When we lift the lid of the hay-baked Chantecler chicken and someone closes their eyes at the rush of childhood memory provoked by the sweet fragrance of alfalfa and baked chicken, or the smell of charcoal smoke on fresh porcini mushrooms brings a beaming smile to people’s faces – we are happy. When they close their eyes in pleasure after the first taste, then we know we have done our jobs right.
